You are probably familiar with butternut, pumpkin, and acorn. However, there are so many other great varieties available – Delicata, Hubbard, Spaghetti, Sweet Dumpling, and Turban. Squash is easy to prepare and has a great nutritional profile. This mini-course will cover types, selection, storage, preparation, and of course, delicious recipes! Learn to go beyond baked with butter and brown sugar and learn how to utilize this vegetable powerhouse in soups, side dishes, main dishes, and even desserts that not only taste good but are GOOD FOR YOU!!
