How you start your day can set the tone for what follows.  Too many of us consume foods high in sugar and starch and low in nutrients in the morning and then wonder why we lack energy and feel sluggish all day.

In this cook-along we discussed ways to make simple, delicious breakfast foods that have a balance of protein, carbs, and fat that will help fuel you all day!  The recipes demonstrated included scrambled eggs and greens, morning glory overnight oats, and breakfast potatoes.

Check out the chart below to help you understand egg labels and make the healthiest choice!  If possible, choose pasture-raised varieties for maximum health and nutrition benefits.

We also talked about how a simple step like PRE-COOKING, then chilling, starches like rice, pasta, and potatoes creates resistant starch which helps with blood sugar control and gut health.  As an added benefit, starting with precooked starches cuts down on cooking time helping to get your food on the table quicker!!  For more information on this topic, check out the Resistant Starch 101 document below!
