In today's session I demonstrated how to make a simple pan seared fish, pineapple salsa, and sautéed greens.  Once you have the basic technique you can tweak the ingredients to fit your needs and tastes!  

With the greens, I used ghee, which is clarified butter and a healthy fat to have in the kitchen.  Using a saturated fat like ghee or coconut oil when cooking bitter foods like greens helps to balance the flavor making them more enjoyable!

When purchasing fish fillets buy ones that are individually packaged so it is easy to pull out of the freezer and thaw quickly.  A tip to quicker thawing is to place the protein (still in the wrapper) on an upside down metal baking pan.  The metal draws out the cold and your protein will be thawed and ready to go in 15-30 minutes!  No more using "I forgot to thaw it" as an excuse for not preparing a healthy meal!!  (check out the video below for details)

Finally, fresh pineapple contains an enzyme, bromelain, which helps to break down proteins. So having some pineapple along with your protein can help digestion.  Pineapple salsa topped tacos, anyone?  This enzyme is destroyed in the canning process, so you much consume the pineapple fresh to get the benefit.  If you are intimidated by cutting a fresh pineapple, check out the how-to video below!
