In celebration of Cinco de Mayo, this demonstration had a Latin flare!
I demonstrated a simple method of making chicken (or protein of choice) fajitas with sliced onions and peppers. Instead of using premade taco seasoning mix, I shared a recipe for you to make your own using single dried herbs and spices that you probably already have in your pantry! The other benefit of making your own spice mix is you are able to adapt to your preferences and can avoid added sugars and salt.
I also prepared a roasted tomatillo salsa to serve as a topping for the fajitas or a dip on its own. By roasting the tomatillos and jalapeno pepper you achieve a milder, slightly smoky taste as opposed to a more crisp, acidic taste when using fresh tomatillos.
Finally, as a side, I made a corn and black bean salad.
