Mushrooms are a highly nutritious food that everyone should be including in their diets. This video provides some tips on purchasing, storing, cleaning, and preparing the basic cultivated varieties found at your local market.  

One of the key considerations with mushrooms is they are very porous.  For cooking, this is a good thing, as they will absorb the flavors of the dish.  When it comes to storing and cleaning, this can be an issue.  If you get the mushrooms too wet from improper storage or submerging in water for cleaning, they quickly become soggy and will spoil quickly.  Just a quick wipe with a damp rag is all that is necessary!
