It can easily be made gluten-free by substituting gluten-free pasta (chickpea is my favorite!). Omit the beef and use vegetable stock for a vegetarian version. For those of you in small households (or if you don't like leftovers for days), you can cut the recipe in half to yield a more reasonable amount!
