Cooking Class: Chickpea Waldorf Salad

The addition of chickpeas and using an avocado as the base for the dressing makes a healthier version of class Waldorf Salad!  

Since it contains protein, healthy fat, and plenty of fiber this can be used as a main dish as well as a side!  It would be the perfect addition to a spring buffet!  Naturally gluten-free and vegan which makes it a good choice when dealing with special dietary needs!
