Cooking Class: Autumn Stuffed Squash

Baked squash halves make the perfect container for this savory fall-flavored filling!

Combine cooked Italian sausage, or use lentils or beans for a vegetarian option, with onion, chopped apple, sage, thyme, and hearty greens then stuff into baked squash halves and top with a sprinkle of flavorful cheese!  It doesn't get much similiar than that!

You can also use hollowed out bell peppers, zucchini boats, or even wrap the filling in cabbage or collard leaves.  The variations are endless!
