Baba Ghanouj is a popular dip that you may have experienced at a Mediterranean restaurant.  Guess what?  It is easy to make at home, too!  It is a delicious alternative to hummus.  

Eggplant is a staple ingredient in Mediterranean cooking and pairs beautifully garlic and tahini.  By roasting or grilling and then removing the tough, bitter peel, you get a smooth, silky result.  

Eggplant contains fiber, copper, manganese, and vitamin B-6 along with many antioxidants including lutein and zeaxanthin!!
