Here is a great way to get in raw cauliflower that doesn't require a veggie/dip platter!  Toss the "riced" cauliflower with a lemon-olive oil dressing, tomatoes, cilantro, parsley, basil, red pepper, and olives and you have a powerful health-promoting side dish!  

Although you can purchase cauliflower "rice", it is simple, fresher, and more nutritious to make it yourself -- check out the video to learn how!

How To Make Cauliflower Rice
Many people are turning to cauliflower as a low-carb, healthier alternative to rice.  Yes, you can buy riced cauliflower, but it is SO SIMPLE to do it yourself!!  PLUS, there will the the added benefit of more nutritional value!  You can use your food processor as shown in the video, or for easier clean-up, just grab your box grater and grate large chunks using the large holes.
