Cooking Class: Chicken Marsala

Chicken Marsala is a restaurant favorite, but it is simple to make in your OWN kitchen!  

One of the keys to success is using thin chicken cutlets of even thickness.  Refer to the video below on how to prepare the chicken cutlets.  Although it is tempting to purchase a fancy kitchen mallet, I have found a rubber mallet from the hardware store works best!  

This recipe relies on just a few ingredients so make sure you get the best quality you can find especially with the Marsala wine.  Since Marsala is fortified it will last for months in your cabinet unlike regular wines which can oxidize rather quickly.

For a vegan option you can substitute pressed firm tofu slices or even cauliflower steaks for the chicken!
