Cooking Class: Creamy Wild Rice Soup

One of the benefits of hosting Thanksgiving dinner is having the turkey carcass to make stock!!  This Creamy Wild Rice Soup is one of MY FAVORITE post holiday meals!  Although it is GREAT anytime and chicken stock is just as delicious as turkey!

Growing up, Campbell's Chicken with Rice soup was always a favorite.  The broth and easy to digest rice got me thru many Crohn's flares.  Now I have upgraded the classic with homemade stock and more nutritious wild rice (although it would work great with white rice if you are in need of lower fiber or just because you prefer it!).  

Adding sour cream or yogurt for creaminess is optional and I usually leave it out.  If you do add it, the result is a cross between cream of mushroom and chicken rice soup.
