Cooking Class: Crockpot Minestrone Soup

Who doesn't love a hearty minestrone soup?

Soup is the perfect make-ahead meal!  Having a stash in the refrigerator or freezer is a life saver on those hectic days! 

This one uses the crockpot, or slow cooker, to create deep flavor.  Using dried beans makes it economical and helps with digestion since you soak them first!  Although it is full of veggies as written, feel free to pile on more!  After all, you CAN NEVER HAVE ENOUGH VEGETABLES!
