Oil and vinegar based dressings are simple to prepare and taste similar to their premade cousins. On the other hand, creamy type dressings are harder to replicate in the home kitchen because they rely heavily on emulsifiers, sweeteners, and unhealthy fats.
The one in this group that I get the most requests for is French. If you are a fan, you know how unique that taste can be! I wonder if people who pour on the French even like the salad part -- I think it is all about getting the dressing! 🙂
In fact, I have a new client who is really struggling with getting in more salads and vegetables, and he REALLY loves FRENCH. I knew that if I could find a better alternative it would help his transition tremendously, and maybe in time get him to actually like the salad part, too!
I believe that eating healthy does not mean having to never have your favorite foods. Just about ANYTHING can be modified to BE BETTER in terms of nutrition, so I went to work on developing a homemade version of this classic.
Below is my result, and I am pretty PROUD OF IT! I haven't had French dressing in YEARS (and I was one of those diehards back in the day!), and this was such a treat! Of course, it is not EXACTLY like the premade, it is a doable substitute that doesn't make you give up too much, but is SO MUCH HEALTHIER! (Note: This is classic French style and not the deep red Catalina type. That is for another time!)
