Cooking Class: Italian Braised Chicken

Braising is an underutilized technique that all home cooks should master.  It uses slow, moist heat cooking to create layers of flavors!  It uses inexpensive cuts of meat to yield delicious, mouth-watering results.  Pot Roast is the most well know braised dishes.

This recipe uses flavorful chicken thighs and cooks up quickly making it a perfect weeknight meal option.  You can even make it vegan by using pressed, sliced firm tofu in place of the chicken!

This will make a generous 4 servings and is even better the NEXT day!!  However, if you want a smaller amount, use 1/2 the amount of chicken.  Pair with rice, quinoa, farro, potatoes, or for a lower carb load, mashed cauliflower, squash or your favorite veggie noodle.
