Cooking Class: Moroccan-Spiced Roasted Carrot Hummus

Hummus is a popular snack and party item, but it can be rather boring.  In this version, it is given a make-over that not only makes it more flavorful, but also more nutritious!

Carrots are roasted to bring out their natural sweetness before they are combined with the traditional hummus ingredients of chickpeas, lemon, and tahini.  A combination of Moroccan inspired spices including cumin, ginger, and cinnamon add zing along with beneficial antioxidants and anti-inflammatory compounds!

Although this dip will keep refrigerated up to 7 days, it does make a large batch.  So, IT IS PERFECT for your next gathering or the next time you need to bring a potluck dish!  

Serve with a variety of cut vegetables and enjoy!
