Looking for a twist on your typical vegetable soup?  Give this Mulligatawny a try!

Mulligatawny is an Indian-inspired British Colonial soup that is flavored with curry, ginger, and garlic.  In this version parsnip and squash is added for added flavor and nutrients!  

It is also great practice for peeling and cutting a butternut squash (see video below)!  However, if you prefer something easier to prep, you can substitute sweet potato for the squash.
