Looking for something to satisfy your sweet tooth but is still healthy?  

These no bake carrot coconut balls fit the bill!  Using dates to sweeten and bind, these snack bits are full of nutrient dense ingredients like nuts, carrots, flax and spices.  If you are adverse to coconut you can leave out and add more flax if mixture is too wet.  You can roll in chopped nuts, cacao, or even cinnamon if desired.  You can substitute another firm shredded vegetable like sweet potato, yellow beet, butternut squash or even small, firm zucchini for the carrot.  The variations are endless!

These are also PERFECT to take to your next holiday gathering!  They are SO DELICIOUS that nobody will even know that they are HEALTHY!!
