Cooking Class: Orange Roasted Tofu & Asparagus

In this recipe tofu is roasted along with asparagus and a flavorful orange sauce.  This is a quick, one-pan meal that is perfect for those busy weeknights!  

This is a good one to try as we transition from winter to spring as it combines winter flavors (orange) with spring produce (asparagus).  

If you do not have miso, it can be replaced with liquid aminos (regular or coconut) or tamari.  Although I haven't tried it, I would think cubed chicken breast can be used in place of the tofu.
