Cooking Class: Southwestern Sweet Potato, Kale, and Black Bean Skillet

This is a quick, one pot meal perfect for busy weeknights!  Shredding the sweet potato speeds up the cooking process while the he addition of kale (or other hearty green) addes powerful nutrients and antioxidants and the black beans provide high quality plant protein!  You can serve this dish on its own or serve with a cooked protein like fish, chicken, or even a poached egg.  

The homemade taco seasoning below is perfect in this recipe or anywhere you normally use the typical packets (which usually have added sugars and preservatives).  Mix up a batch and store in an airtight container in your pantry.

This recipe uses taco seasoning mix which is SUPER EASY to make yourself.  You probably have all of the ingredients already in your pantry.  Making your own spice mixes makes sure you are using high quality, non-irradiated spices and no preservatives, added sugars, or excess sodium.  I keep a jar of this mix in my cabinet at all times!
