Cooking Class: Summer Succotash

Succotash is a southern vegetable dish consisting primarily of sweet corn with lima or other shell beans.  In this version, onions, red bell pepper, green beans and tomatoes are added to boost the veggie load.  Bacon, garlic, and fresh herbs add great flavor.

This is a simple, delicious dish that comes together quickly.  It illustrates the importance of doing your mise en place (getting everything prepare BEFORE you start cooking) and why mastering technique is more important than collecting recipes when it comes to easy, quick meal prep!  

For a vegan/vegetarian version, substitute sliced shitake or baby bella mushrooms to recreate the umami flavor of the bacon.  Since lima and other shell beans are not complete proteins, it is beneficial to combine this dish with a grain like brown rice to make sure you are getting all the essential amino acids.  You can also use a complete plant protein like edamame in place of the lima beans.  In this case the grain is not necessary.
