This simple stir-fry comes together easily and packs a ton of flavor! It is one of my favorites, and I am sure it will be one of yours, too!
Chicken breast, fresh green beans, and red peppers are tossed with a flavorful sauce of coconut milk, liquid aminos, and lime. The coconut rice is creamy and delicious, but you can substitute cauliflower rice (simmer in coconut milk for more flavor) for a lower carb option.
If you are looking for a vegan/vegetarian options, use pressed, cubed tofu in place of the chicken! Just as delicious!
